
牛排烹調的生熟度(Degree of Cooking )
牛排的烹調方式有煎(Grill)與烤(Roast)。Grill是烤架的意思,將牛排放在炭火上直接加熱叫做煎,把牛排放到烤箱里加熱叫做烤(Roast),以下是介紹煎制牛排的生熟度:Very Rare:極生,煎的(Grill)時間不超過3分鐘。外表有燒烤過的痕跡,但是里面還是冷得幾乎沒有受到熱度。切開時還有血水滲出,但是肉質極嫩,口感多汁。
Rare:生,煎的時間不超過4分鐘。外表有烤焦痕跡,里面肉質呈現原來紅色,但入口有熱度。切開時還有血水滲出,但是肉質極嫩,口感多汁。
Medium Rare:中生,煎的時間6~8分鐘。外表有燒烤過的痕跡,但是里面已經全面加熱,可以感受到相當熱度,但是肉質還是呈現紅色。切開時還有稍許血水滲出,但是肉質嫩,口感多汁。
Medium:稍熟,煎的時間8~10分鐘。外表燒烤呈深褐色,但是里面除了中間部分呈現粉紅色外,外圍部分呈現燒烤過的淡褐色。切開時流出褐色肉汁,需要咬上數口才能咽下。
Medium Well:稍熟,煎的時間8~10分鐘。外表燒烤呈深褐色,但是里面除了中間部分呈現粉紅色外,外圍部分呈現燒烤過的淡褐色。切開時流出褐色肉汁,需要咬上數口才能咽下。
Well Done:甚熟,煎的時間12~15分鐘外表已有明顯烤焦痕跡,熱度已經滲入整片肉,里面肉色因為高度加熱呈現深褐色。咬勁很夠才能下咽。
牛排佐料(Accompaniments )
馬鈴薯:Mashed Potato(馬鈴薯泥)或Baked Potato(烤馬鈴薯)、French Fries(馬鈴薯條),三者擇一:前食用時可加肉汁調味;后者食用食用刀切開,可以涂上少許牛油(Butter )或食鹽調味。
蔬菜:一小節煮過的玉蜀黍(Corn)、數顆綠色花椰菜(Broccoli)、洋蔥(Onion)。
蘑菇:數片小蘑菇(Mushroom)
比較高級的牛排餐的佐料會提供海鮮,例如一只龍蝦尾、或兩只炸明蝦,就是我們臺灣所稱的「海陸大餐」(Surf and Turf)或者(Reef and Beef)。二者都有押韻。Surf 是沖浪代表海產、Turf是草地代表牛的飼料;Reef是礁石代表海產。
牛排調味料(Condiment)
有許多人食用牛排喜歡原味,不加任何調味料。但也有人喜歡家一些調味料,沖淡牛排的血腥味。在一般大眾化的牛排館,供應瓶裝有品牌的牛排醬(Steak Sauce),最有名的兩個牌子是A1 Steak Sauce 與Heinz 57 兩種。非大眾化的牛排館供應由廚師自制的牛排醬汁,如蘑菇醬汁(Wild Mushroom Source)或者黑胡椒醬汁(Black Pepper Sauce)。

Waiter:What kind of steak you prefer for the dinner?
Guest:Mmm, they all look appealing(誘人的), do you have any suggestion?
Waiter:I recommend the Chef's Special, the Prime Grade Fillet Mignon. It is very light and tender.
Guest:What do you mean by Prime Grade?
Waiter:It means the best quality beef according to the grading system made by the US Department of Agriculture.
Guest:I see, so I take you're advice, let's try your Filet Mignon.
Waiter:Thanks, how do you want to your steak cooked? Most guests choose Medium Rare.
Guest:Will it be too rare? I am not used to rare food.
Waiter:Not at all, you will find that is the meat is so tender and juicy.
